Tonight's menu is something I always wanted to try. I have recently become a spinach fan. Maybe in my older age, my pallet has become more diverse. Or maybe my tastebuds fade away with older age. So things don't taste as strong compared to my childhood. This turned out really well and I definitely will prepare again. Also, the chicken is wrapped in bacon. That is really the secret weapon. You can never go wrong with bacon. That makes me wonder why we love bacon sooooo much! I'll save that for another post. lol, Recipe and rating below.
- Package of Free Range Chicken Breasts
- Package of Center Cut Bacon, Half for wrapping chicken, other half for bacon bits for filling.
- 1 cup of Jasmine rice, 1 teaspoon of Kikkoman soy sauce
- 1 cup of Parmesean Cheese
- 1 egg
- Olive Oil
- 2 garlic cloves
- 16oz bag of Organic Spinach (Wash your spinach no matter what the bag says.)
Filling
Chop up the spinach and place in bowl. Zap it in the microwave to make it wilt. Add beaten egg, cheese, chopped garlic, seasoning. You also want to add chopped bacon and Olive Oil.
