The story tells that chiles en nogada are from state of Puebla and came up in 1821 in a convent hidden behind an emblematic house of Puebla where lived Agustinian nuns, they were preparing a dish to entertain Emperor Agustín de Iturbide. The nuns decided represent the colors of the trigarante army (green, white and red) in a tasty dish like this, taking the chiles poblanos as green color, walnut as white color and a beautiful red color taken from the pomegranate, this last are harvested in August. Definitely a dish that anyone can't resist, it's clear that even an emblematic and traditional recipe from Puebla, each person have a diferent cook and methods to do things, the essence of the chiles en nogada keep being the same and keep going trough the years and I'm sure that will continue, things like this let see our Mexican origins.
