Today's Breakfast Recipe: Breakfast Omelette Wrap

I'm sorry I could not post breakfast recipe yesterday, was on the road... so today we resume.

Today's breakfast recipe is Breakfast Omelette Wrap.

It's easy to prepare and could be arranged to suit you whether you are a vegetarian or not.

This recipe can produce 2 servings

INGREDIENTS

2 spring onions, chopped
4 tbsp semi-skimmed milk
4 medium eggs
1 courgette, cut in strips
1 carrot, cut in strips
1½ tbsp sweet chilli sauce
2 tsp toasted sesame oil
2 tsp soy sauce

PREPARATION

  1. Whisk the eggs and milk together and add a bit of seasoning to taste.
  2. Heat up about 1 tsp oil in a frying pan.
  3. Pour in half of the egg mixture into the frying pan
  4. Swirl the egg to the edges of the pan to help it extend and cook for about 2 minutes.
  5. Transfer into a plate, while you make the second omelette.
  6. Having done that, heat up the remaining oil in the pan and fry the vegetables for about 3 minutes.
  7. Add in the soy sauce and cook for about 1 minute more.

The assembling

  1. Apply the chilli sauce all over the omelettes
  2. Top with the vegetables
  3. Fold up from the bottom.
