Eggs... hmmm. We love 'em, fried,boiled or baked. Do you know that eggs contain very high quality protein and they improve physical and mental energy all day long especially when taken as breakfast?
I want to introduce 2 wonderful dishes you can make with eggs. They are very easy to prepare and You can serve as breakfast, lunch or dinner.
CLOUD EGG DISH

INGREDIENTS
- 4 large eggs
- Freshly grated Parmesan
- Salt, to taste
- Black pepper, to taste
- ham, chopped
chopped chives, for garnish
PREPARATION
- Preheat oven to 450° and lay paper liners in a large baking sheet.
- Break the eggs and separate the whites from the yolks.
- Put the egg whites in a bowl and the yolks in another bowl.
- Add salt and pepper to taste, into the egg whites.
- Beat the egg whites until it develops stiff peaks. You can Use a whisk or hand mixer.
- Add in the grated Parmesan, ham, and chives, gently.
- Make 4 mounds of egg whites on the baking sheet and make a small dent at the center of each.
- Bake until its slightly golden, for about 3 minutes.
- Place an egg yolk to the center of each egg white cloud.
- Sprinkle some salt and pepper on the yolk.
- Bake until the yolks are perfect, for about 3 minutes more.
Ta-da! There you have it!
The next dish is almost like it
PERMESAN EGG-IN-A-HOLE
INGREDIENTS
6 slices of bread
Mayonnaise
6 large eggs
Grated Parmesan cheese
Salt and ground pepper, to taste
DIRECTIONS
- Mix mayonnaise and cheese together in a bowl.
- Spread on both sides of each bread slice.
- Cut a 3-inch circle from the center of each slice of bread.
- Heat up a skillet over medium heat and place a slice of bread to cook on one side until golden brown, for about 1 to 2 minutes.
- Turn the other side, crack an egg into the hole of the bread.
- Sprinkle salt and pepper to taste.
- Reduce the heat and cover slightly to allow the eggs cook for about 3-4 minutes.
- Repeat process with the remaining bread and eggs.
- You can also cook bread rounds too.
