The wonderful thing about homemade stew is you don't need to follow a strict recipe and that it is so unique to the person making it, you can just throw in as much and as little as you want and play about with different flavours and seasoning. It doesn't require a lot of effort to make, you just throw stuff in and let it boil for a little while.
Since i don't eat meat, i pack mine with tons of vegetables, a whole lot of seasoning and an occasional Linda Mccartney Sausage, here is what my go to recipe consists of..
- Cauliflower
- Onion
- Pepper
- Tomato
- Chopped Tomatoes
- Sweetcorn
- Tumeric
- Garlic powder
- Red Lentils
- Pepper
- Paprika
- Rosemary
- Vegetable stock cube (1/2 cube for one serving)
- Linda McCartney Sausage (or any Vegan Sausage)
- Mustard (mix in at the end if you like a little extra kick!)
I don't measure anything out, i just pour in until the flavour is right. I also put in Mushroom, Chickpeas and Carrots but on this occasion i was out.
You want to put the vegetables and the lentils into a pan first and pour boiling water in until the contents are about three quarters submerged, let that boil until the water has gone down a bit (add more water if its almost all gone) and then add the chopped tomatoes, stock and the seasoning and let boil a little bit longer until the vegetables are nice and soft. Grill your Sausage around the time of adding the seasoning too.
Once everything is cooked drain any excess water and serve up, i mix in English Mustard at the end but you can add anything you want, if adding ketchup or mayonnaise to everything is your thing instead then go for it. I also highly recommend houmous .
