Stir fried clear noodles for vegetarian recipe.

Ingredients.

  • 100 grams of clear noodles.
  • 3-4 wood ear mushrooms.
  • 1 carrot (shredded).
  • 1 shallot (finely chopped).
  • Black pepper, salt and vegetable oil.

Instructions.

  • Put clear noodles in a bowl and cover with warm water. Soak and pulling noodles apart and stirring for about 10 minutes. Drain well.
  • Put mushrooms in a bowl and cover with hot water for about 15 minutes. Drain and rinse mushrooms, trim off any hard part of mushrooms. Then cut chiffonade the mushroms.
  • Heat vegetable oil in the frying-pan over medium heat, add shallot and fry well until golden. Add carrot and mushrooms and stir-fry until soften. Set aside.
  • Heat leftove oil which you have cooked carrot over medium low heat, add clear noodles and a little of water. Stir-fry for a minutes. Then add cooked carrot and mushrooms. Continue to cook for about 2 minutes. Add salt to taste. Sprinkle black pepper on top.
