Ingredients.
- 200 grams of half dried fish.
- 1 Shallot (finely chopped).
- 1 ginger (cut into jullienne).
- 4 cloves garlic (finley chopped).
- Sugar, rice vinegar, vegetable oil.
Instructions.
- Soak dried fish with warm water for about 10 minutes. Drain it and cut it into large pieces.
- Prepare the sauce: Mix well 2 tablespoons sugar with rice vinegar until the sugar dissolves. The important thing is that taste the sauce (sweet and sour).
- Heat vegetable oil in the pan over medium heat. Add dried fish and fry well until golden brown. Set aside to drain.
- Heat leftover fish oil which you have just cooked fish over medium low heat. Add garlic, shallot and ginger, fry well until golden. Then add prepared sauce, fried fish and simmer for about 5 minutes. Add sugar to taste.
- Serve with cooked rice.
