Grapefruit bitters to be exact, and they've been steeping in this state for 2 weeks now. Mixed with peels and other botanicals in Everclear (151 proof!), its now time to separate the solids from the liquid and boil out that last bit of flavored alcohol:

With the solids cooled and sealed up, it'll be just one more week of steeping the solids, then straining that last bit of liquid into the full mixture.
If you haven't had bitters in a cocktail before, I'd recommend it! It adds a whole new dimension to a drink (and it only needs a sprinkle). I'm starting with grapefruit but if all goes well, I'm looking forward to some serious experimentation with other flavors too.
