Hello, my fellow Steemians! This week the cookwithus contest is breakfast. I saw that this was the theme a couple weeks ago and I knew from that moment I had to make my mom's breakfast casserole. There wasn't one holiday growing up that we didn't have this for breakfast. This thing is like where all breakfasts come to meet. A little french toast and scrambled eggs with cheese and sausage to make a fantastic tasting casserole. The first meal of the day in the 13th century was known as dinner or "disner". It meant to break a fast until it's meaning shifted in the late 13th century to mean what we know as the last meal of the day. It was not until the 15th century that the term breakfast came into use. It was used as the first meal of the day, it literally means to break the fasting period of the night before. I practice intermittent fasting so this will be a nice way to break my 18-hour fast tomorrow.
Ingredients:
8 eggs
2 cups whole milk
6 slices of white bread
1 lb jimmy dean maple sausage
1/2 lb of mild shredded cheese
1/4 teaspoon of salt
1/2 teaspoon of pepper
A lot of this casserole is prepared the night before you're going to have it, which makes it easy in the morning. In a large pan cook sausage over medium heat. Stir frequently until its crumbly and browned, about 10 minutes. Line a large plate with paper towels and remove sausage from heat, place cooked sausage on paper towels to drain.
Place the bread in a toaster and toast lightly. Tear toast into pieces and set aside. Take a casserole dish and spray with cooking spray. Split toast, sausage, and cheese into 3 equal piles. Now you will want to layer your three ingredients. Toast on the bottom than sausage and the cheese. Make three layers and set aside.
In a large bowl, whisk the eggs, milk, and salt and pepper together. Pour mixture over the casserole. Cover with cling wrap and place into refrigerator. The next morning preheat oven to 350 degrees. Cook uncovered for approximately 45 to 60 minutes. Take a paring knife and insert into casserole if it comes out clean you're good to go, if not wait 10 minutes and try again.
This casserole is all the great breakfast foods combined to make a great meal. I've never seen anybody not have a 2nd helping of this casserole. You can also add pretty much anything to this just make sure you pre-cook any meat you use so you can discard the grease. I always serve this with fresh squeezed orange juice.
