Raw, cooked, painted or even chocolate, eggs are inevitable at Easter. But what do hen's eggs contain and how healthy they are?

In this period there is no supermarket where we do not find many colored eggs that awaken the appetite. However, we do not eat eggs only at Easter; in Switzerland, consumption is over one billion a year. A portion of the eggs consumed is present in various foods as a processed ingredient, for example in pasta.

For a long time, the egg was considered a true cholesterol bomb and has enjoyed a bad reputation. In fact, a medium-sized egg contains 220 milligrams of cholesterol, enough to cover the maximum daily requirement of an adult, which is 300 milligrams. The belief that no more than three eggs a week should be eaten is so rooted for years. However, there are now several studies showing that healthy people do not have to worry if they eat more eggs since their organism tolerates one egg a day without problems. In a healthy subject, the level of cholesterol present in the blood is self-regulating. This means that if we take a certain amount of cholesterol from the diet, our body will produce a correspondingly smaller amount. If, on the other hand, we introduce more cholesterol with the diet than the body needs, a mechanism is activated that temporarily prevents the intestine from absorbing it. In this way, the level of cholesterol remains almost unchanged.

Important: people with a high risk of cardiovascular disease, high cholesterol levels, fat metabolism disorders or diseases such as diabetes should moderate egg consumption.
