Ingredients
🌽 3 cups Maíz Cascado
💧 1 ½ cups Water
🥛 1 ½ cups Milk
🥄 ½ cup Salted Sour Cream
🧈 90 grams Margarine
🍬 2 teaspoons Sugar
🧀 1 cup Shredded Semi-hard Cheese or Mozzarella
🧀 ½ cup Shredded Smoked Cheese
🧂 ½ teaspoon Salt
🌿 1 tablespoon Oil
🧀 Optional: Sliced Frying Cheese
Instructions
1- Prepare the Masa:
- Combine the maíz cascado with water and milk in a large stainless steel mixing bowl.
- Mix by hand until a compact dough forms.
2- Incorporate Fats and Sweetener:
- Add the salted sour cream, margarine, and sugar to the dough.
- Mix thoroughly until the dough has a yellowish hue.
3- Add Cheese and Rest:
- Taste the cheeses for saltiness.
- Mix the shredded cheeses into the dough and let it rest for at least 10 minutes.
4- Adjust Seasoning:
- Taste the dough after resting.
- Add salt if necessary based on the cheese used.
5- Preheat Griddle:
- Use a black non-stick electric griddle.
- Test a small portion of dough to judge texture and taste.
6- Form Tortillas:
- Divide the dough into equal balls.
- Use Tío Pelón brand plastic sheets to flatten each ball into a tortilla.
7- Cook Tortillas:
- Cook tortillas on the preheated griddle until golden brown on one side.
8- Flip and Cook:
- Turn tortillas to cook the other side until it also turns golden.
